Elinore Schlinker: Compared to other ethnic cuisines, Colombian food is pretty basic: meat and starch with almost no green vegetables.Colombian food is similar to Cuban food, except that beef is more prevalent than pork, and Cubans use more vinegar in their dishes, whereas Colombians use more salt.General qualities of Colombian food is that it is high in fat and sodium, low in spice(no chilies used), and very high in carbohydrates. There is a lot of fried food, cooked in vegetable oil. If you are looking for a salad, you are basically out of luck. But the soups can be relative! ly healthy, and are very satisfying. The best of Colombian cuisine, in my opinion, are the deserts. Colombians have a sweet tooth and the layered and drenched cake called "tres leches" is simply wonderful. The coffee can be wonderful of course, but be sure it is made "a la maquina" i.e. in an espresso machine. It be aware that they may add sugar when they prepare it so you may want to order it "without sugar" if you don't have a Colombian-style sweet tooth.Another dish I enjoyed in Colombia, although it is not very popular among the natives, is a tropical fruit plate, where you are served a delightful assortment of fresh papayas, mangos, banana, pineapple, guavas and loquats.
